Chipotle Salad

A loving wife who used nutritious foods to help her husband beat cancer shares a spicy salad recipe.

Dwan Reed's Chipotle Salad

The sliced apples and toasted pecans will make this delicious and healthy dish a big hit with your entire family.

Ingredients

Salad
8-ounce bag of Fresh Express 3-color Cole Slaw 1 medium red onion, thinly sliced
2 Granny Smith apples, thinly sliced 1 c. pecans, toasted and chopped (toast in oven at 350°F for 4 or 5 minutes)
Dressing
1 T. Dijon mustard ¾   c. mayonnaise
1 t. sugar 1 lemon, juiced
1 t. ground chipotle (add more if you like it spicier Kosher salt and fresh ground pepper

Preparation

1. Combine coleslaw, apples, onion and pecans in a large bowl. Mix well with your hands and set aside.

2. In a small bowl, stir together the mustard, sugar, ground chipotle, mayonnaise and lemon juice until well blended.

3. Season with salt and pepper.

4. Pour the dressing over the salad and toss.

Serves 4 to 6.
