Date Nut Balls

This recipe was handed down to Katie from her mother, and now her own daughters help her make it at Christmastime

Ingredients

2 sticks unsalted butter
2 8-oz. packages chopped dates
2 c. light brown sugar
2 c. finely chopped pecans
1 c. coconut (optional)
4 c. Rice Krispies
Powdered sugar (about ½ box), for coating

Preparation

1. Add butter, dates and brown sugar to a large saucepan. Cook over medium heat for 6 minutes, stirring constantly. Remove from heat and stir in pecans, coconut and Rice Krispies; allow to cool down before handling.

2. With your palms, gently roll mixture into quarter-size balls; set on a plate. Roll balls in powdered sugar. Let balls sit until dry (1 hour). Store at room temperature in an airtight container.

Makes 6 dozen.
