I don’t usually bake cakes, but these easy chocolate cupcakes are a family favorite. I like to have them in the house as a fun treat for the adults and grandchildren. You could make a simple frosting for these but they’re also good with a little bit of powdered sugar sprinkled on top!
Ingredients
1 cup hot water
½ cup unsweetened cocoa powder
1¼ cups granulated sugar
½ cup unsalted butter
2 large eggs
1½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
1 teaspoon pure vanilla extract
Preparation
1. Preheat oven to 350°F.
2. Insert paper liners into two 8-cup muffin tins.
3. In bowl, whisk hot water into cocoa slowly until smooth. Set aside.
4. Cream sugar and butter for 4–5 minutes with electric mixer, or until light and fluffy. Add eggs, one at a time, beating well. Whisk flour, baking soda, baking powder and salt until well blended. Add dry ingredients to wet ingredients, alternating with cocoa mixture, until well mixed. Beat in vanilla.
5. Spoon batter into cups, filling each about two-thirds full.
6. Bake 18–20 minutes or until done.
