These Christmas tree–shaped ice cream sandwiches are spiked with a little touch of cinnamon, which gives them a special festive flavor.

These are great, tasty creations for the whole family, so grab your mother, father, aunt, or uncle and start baking!

Feel free to use other large ornamental cookie cutters if you’d like to make a variety of ice cream sandwiches.

Ingredients

3 cups all-purpose flour, plus more as needed

2 tablespoons unsweetened cocoa powder

1 teaspoon baking powder

1 teaspoon ground cinnamon (optional)

Pinch salt

1 cup sugar

8 ounces (2 sticks) unsalted butter, at room temperature, plus enough to grease baking sheets

1 large egg, lightly beaten

1 tablespoon milk

1 teaspoon vanilla extract

2 ½ cups Vanilla Ice Cream

Preparation

1. In small bowl, combine the flour, cocoa, baking powder, cinnamon, if desired, and salt; set aside.

2. In large bowl, beat the sugar and butter together until creamy. Add the egg, milk, and vanilla.

3. Gradually beat in the flour mixture just until combined.

4. Shape the dough into 2 disks and wrap in plastic. Refrigerate for 2 to 3 hours, or overnight.

5. Preheat the oven to 375 degrees F. Lightly grease two baking sheets.

6. Lightly flour a work surface and roll out one disk of dough, adding flour as necessary and turning the dough to prevent sticking.

7. Cut with a 4 x 4-inch cookie cutter (such as a Christmas tree). Bake until the centers are set, 8 to 10 minutes. Repeat to make a second batch.

8. Let the cookies stand on the baking sheets for 1 to 2 minutes. Remove from baking sheets to a wire rack; cool.

9. Soften the ice cream for a few minutes in the refrigerator. Spread a thick layer of ice cream (about 4 tablespoons) on half of the cookies. Make sure the layer is smooth.

10. Top with the other cookies and press together lightly. Gobble immediately, or wrap in tin foil and freeze for up to 3 months.
