Lamb Burgers

Whether you cook them on the grill or the stove top, these juicy lamb burgers rock.

I love to barbecue in summer, but traditional beef burgers can get boring. For an easy-to-prepare alternative, try these lamb burgers. The distinctive flavor of lamb is complemented by mint and olive tapenade, and the cool crunch of cucumber slices with the sweet bite of red onion makes this meal taste fresh as a summer garden.

Ingredients

1 large loaf ciabatta bread, or 4 rolls or buns 2 oz. feta cheese, crumbled or cut into small pieces
4 Tbsp. olive tapenade 3 sprigs fresh mint, chopped or torn coarsely
Salt and pepper to taste 3 Tbsp. diced red onion
4 6oz. ground lamb patties 1 small cucumber, cut into thin slices

Preparation

1. Preheat grill or cast iron pan to medium high heat. Divide ciabatta bread into four sections and cut each section in half horizontally to make buns.

2. Toast inner surface of bread until golden brown. Spread olive tapenade on buns to taste.

3. Sprinkle salt and pepper on lamb patties and grill or fry for 3 to 4 minutes per side. Let cool for a few minutes then place on bun.

4. Top each burger with ½ ounce feta crumbles, a pinch of mint leaves, diced red onion and a few slices of cucumber.

Serves 4.
