Refrigerator Broccoli Salad

What could be easier than a dish that requires no cooking–just chopping and mixing–and can be prepared days in advance?

The tasty chilled salad is the ideal thing to bring to a summer gathering or pot-luck supper.

Ingredients

1 head broccoli, florets and stalks chopped
  into bite-size pieces (4 to 5 cups)
1 c. sunflower seeds
1 c. raisins or dried cranberries 1 c. mayonnaise
½ lb. bacon, cooked and crumbled ½ c. sugar
1 medium red onion, chopped ½ c. white vinegar

Preparation

1. Place broccoli in a large bowl. Add raisins, bacon, onion and sunflower seeds and toss to combine.

2. In a small bowl, stir together mayonnaise, sugar and vinegar until well combined. Pour dressing over broccoli mixture and stir to coat well.

3. Store, covered, in refrigerator until ready to serve, so that the dressing has time to chill and the flavors blend.

The broccoli salad will keep, covered, in the refrigerator for several days.

Serves 4 to 6.
