Cowboy Cookies

Here's a sweet Western treat, straight from the hill country of Texas.

Cowboy Cookies

Here's your chance to try the recipe that helped to launched Marilyn's thriving bakery, Mrs. Bush's Pie Co.

Ingredients

1 c. light brown sugar 1 tsp salt
1 c. white sugar 1 tsp baking soda
7 Tbs soft butter 1½ c. dry oatmeal
½ c. Crisco shortening 1 c. coconut flakes
2 eggs ¼ c. chopped walnuts
1½ tsp vanilla ¼ c. chopped pecans
1½ c. flour  

Preparation

1. In a large mixing bowl, cream together the sugars, shortening, butter, eggs and vanilla.

2. In a smaller bowl mix flour, salt and baking soda, then add to sugar mixture and beat about a minute longer.

3. In a large stainless steel bowl, mix the oatmeal, coconut and nuts. Add creamed mixture to dry mixture and mix well.

4. Drop large tablespoonfuls onto a greased cookie sheet. Bake at 350 degrees for about 12 to 15 minutes.

Makes 18 cookies.
